According to many accounts, there is a story that cheese originally came into being when an eastern traveler carried some milk in a pouch made from a sheep’s stomach. In the middle of his journey, as the sun blazed down, an enzyme (rennet) was released from the stomach, and so turning the milk into whey and eventually, cheese.
Cheese is often added to hot foods at the end of their cooking time in order to garnish or add a little extra flavor. Don’t expose cheese to very high oven temperatures, especially if it is to be cooked for a long time. If a recipe calls for a specific type of cheese, don’t use anything else unless you are sure that you will achieve the desired results.
