Wonderful Busy Day Sandwiches:



Having a busy day running to and fro? When you have a busy day, you don't have to resort to a couple pieces of bread around a slice of lunchmeat and cheese. Even on busy days, you can make a tasty filling sandwich. Try BBQ Burgers, Turkey and Vegetable Wraps made with tortillas or Turkey and Veggie Pocket Sandwiches. The wraps and pocket sandwiches are also great for the lunchbox or brown bag. They offer healthy alteratives as the kids head back to school, too.

HOMEMADE BAR-B-Q BURGERS
This is an old Midwestern recipe.

1 lb ground beef
1 small onion, diced
1 can tomato soup
1/4 soup can of water
1 tsp salt
1 tbsp chili powder
2 tsp brown sugar
2 tsp prepared mustard

In a large skillet, brown the ground beef and onion until the onion is tender and the beef is no longer pink. Drain well and return to the skillet. Mix the soup with the water, using a wire whisk. Whisk until smooth then pour over the beef and onion. Add the salt, chili powder, brown sugar, and mustard; stir to blend in well. Bring the mixture to a boil, lower the heat and simmer for 15 minutes. Serve on buns with pickles, red onion slices, or other condiments of your choice.

TURKEY AND VEGETABLE WRAPS
2 cups diced smoked turkey breast (or leftover turkey)
2 cups salad greens
1/2 cup canned corn, drained
1/2 cup chopped red bell pepper
1/4 cup thinly sliced green onions
3 tbsp ranch dressing
4 (8-inch) flour tortillas

In a large bowl, combine the turkey, salad greens, corn, bell pepper, green onions, and ranch dressing. Toss the mixture well to coat. Warm the tortillas according to the package directions. Top each of the tortillas with a cup of the turkey mixture; Tuck in one end of the tortilla then roll up.

TURKEY AND VEGGIE POCKET SANDWICHES
1/2 cup Ranch Salad Dressing
1/4 cup Mayonnaise
1 1/2 cups Deli Oven Roasted Turkey Breast, cut into strips
1/2 cup shredded carrots
1/2 cup chopped cucumber
1 small tomato, diced
2 whole wheat pitas, cut in half to make 4 sandwiches
4 pieces leaf lettuce

Line each pita half with a piece of the lettuce.

In a small bowl combine the Ranch Dressing, mayonnaise, turkey strips, carrots, cucumber, and tomato. Divide the mixture evenly between the 4 pitas, stuffing mixture into the lettuce.
